What Is a Roast Curve?

A roast curve is a temperature-over-time graph used during the roasting process. It tracks how heat is applied to the beans, capturing key stages like:


  1. Drying Phase (0–4 min). Beans lose their natural moisture. Even drying ensures the centre and surface roast uniformly, avoiding baked or scorched flavours.

  2. Maillard Reaction (4–8 min). This is where the magic happens — sugars and amino acids react, creating caramel notes, body, and aroma. It's the base of complexity in the cup.

  3. First Crack (~8–9 min). Beans pop as internal pressure rises. From here, development is key — roast too little, and it’s sour; too long, and it becomes flat or bitter.

  4. Development Phase. Post–first crack, the profile is shaped. This is where sweetness, body, and roast intensity come together.
